It’s been a couple years probably since we last had a meal at Chili’s, and why I have no idea. We love that mess. I dream about their chips and salsa, and if you’ve ever tasted it I’d venture to say your mouth is watering thinking of it. We had dinner there tonight and ordered that most delicious appetizer.
Earlier this year I stumbled across the recipe for Chili’s salsa and since then I make it almost weekly and we snack on it every time the fridge opens. It’s dangerously similar to the real thing, except I don’t like it too hot so I don’t put in many jalapenos. I bet you want the recipe, and you could easily find it on Pinterest. Or I could just post it here and save you the clicking.
2 cans (14.5 oz each) whole tomatoes, drained
About 6-7 jalapeno slices (or more if you like it hot)
1/4 c. yellow onion, cut into quarters
1.5 tsp. garlic salt
1 tsp. salt (add more if you like it super salty)
1 tsp. cumin (this is the magic ingredient!)
1/2 tsp. sugar
1 tsp. lime juice
Dump into your blender and puree for a few seconds until smooth. Serve with tortilla chips.
Now if we could only find chips that taste like that… Tia Rosa is the closest I’ve found, and you can find them at Walmart and Corner Market, but it’s just not the same.
