I love when Josh and Em come home. Since they work in Pennsylvania, their trips home are only a once-monthly event that we look forward to. Me, Ben, Jim and Mal have been having fun but it’s so good when all the second floor windows on our 2 blocks are lit up with life at night. Tonight I felt it my wifely duty to cook something for poor Benny boy (it’s been a while), and for us there is no greater joy than to feed the people we love too. The Rasberrys and Nowells (AH! Newlyweds!) came over for roast, green beans, and delicious twice-baked sweet potatoes, and we had the perfect premature Christmas playlist on. Don’t judge me. I live with the Christmas King of the Greater Magnolia/Oak Streets Territory.
I would feel amiss if I didn’t share this wonderful sweet potato recipe with y’all. Emily told me about it over lunch today and flung a craving on me, so here we are:
4 sweet potatoes
1/2 stick of melted butter
1/4 cup white sugar
2 tbls. maple syrup
Wash then bake the potatoes until soft (don’t wrap them in tin foil), then cut them lengthwise and scoop out all the meaty goodness and put in a large bowl. Preheat the broiler to 400 degrees. Mash up the potato mush with the butter, white sugar and maple syrup, then put back into the potato skins. Sprinkle each potato with brown sugar and cover GENEROUSLY with marshmallows. Place in oven until marshmallows get brown on top, then remove from oven. Serve them to your family, and be proud because it was so much easier than making a sweet potato pie. Voila!
