#1,602 Baccalaureate Sunday + Southern Cheese Wafers.

This is always one of the hardest days on the church calendar for a youth minister. Ben was up at midnight last night, writing his goodbye letters to Jay, Jonathan and Matthew, wrapping their gifts that he gave them at the altar this morning. 
I can’t stand saying goodbye to our seniors. I took so many more photos, but our internet is crippled and won’t cooperate so I’ll leave it at these 2 for now. 

The upside to this? At the beautiful senior luncheon at the Fishers’ palatial home—she had those amazing homemade cheese wafers and the onion souffle dip that I only let myself have maybe once a year. I was able to make off with the cheese wafer recipe… You’ve got to make a batch STAT. It’s kind of a requirement of being a Southern woman—knowing how to make cheese straws or cheese wafers or cheese wads or whatever you want to call them. You’ll love them and want to give them as gifts. Trust me on this.

Southern Cheese Wafers

You need:
2 cups grated sharp cheddar
2 sticks softened butter
2 cups sifted flour
2 cups rice krispies
1/2 teaspoon red pepper
1/2 teaspoon seasoned salt
1 teaspoon Worcestershire sauce
Mix cheese and butter. Work in flour using your hands. Put in pepper, seasoned salt, and Worcestershire sauce and mix well. Then pour in cereal. Mix without crushing cereal unnecessarily. Shape into small balls. Put on cookie sheet and flatten with a fork. Bake at 375 until light brown, about 10 minutes.

  1. Yum! I have friends coming to dinner Wednesday-I'm going to make these! What kind of grated cheese? Shape cheddar? And is the cheese grated fine? Sorry, I just don't want to mess this up! Thank you Erin.

    • Shoot! Susie didn't say, but I can speak frome experience and say that the Sargento 'off the block' sharp cheddar in the shredded cheese section is amazing, but I always hand grate fresh if I've got time. Sharp cheddar for sure!
